Sun-Dried Tomato Toasts



Toast the baguette slices under a preheated broiler or in batches in a toaster oven. If preferred, substitute crisp whole-grain crackers for the toasts. Serve as a first course to Braised Chicken with Dried Plums & Almonds

  • 1 large tomato, seeded and chopped
  • 1/4 cup chopped, drained, oil-packed sun-dried tomatoes
  • 2 tablespoons chopped fresh basil or parsley
  • 1 clove garlic, minced
  • 1/8 teaspoon red pepper flakes or freshly ground black pepper
  • 16 slices whole-wheat baguette, 1/2 inch thick, toasted

In a bowl, combine the tomato, sun-dried tomatoes, basil, garlic, and red pepper, flakes and to mix well. Spoon the tomato mixture onto the toasts just before serving.
